This distinctive concept by Sage Restaurant Group was designed to offer a familiar, inclusive sense of place—welcoming both guests of The Elizabeth Hotel and the Fort Collins local community. More than just a restaurant, the style-busting brand merges a retail market with an American brasserie-style dining experience, all with a strong emphasis on wine and local entrepreneurial offerings.
Whether it's a morning coffee from Bowerbird, a quick bite in the market’s eclectic lounge, or a celebratory dinner in the main dining room, every corner of the space is crafted to reflect the laid-back charm and creative energy of Fort Collins. The design intentionally evokes a small-town feel with thoughtful details that showcase the vibrant, community-first spirit of this emerging Colorado destination.

This versatile establishment functions as a retail market and an American brasserie-style restaurant, with a strong emphasis on wine and a focus on community and local entrepreneurship. Guests can enjoy a range of experiences, from go-to coffees to quick lunches in the eclectic lounge or celebratory dinners in the main dining room. The space is meticulously designed to create a small-town feel that reflects Fort Collins' vibrant character, featuring reclaimed wood floors, painted wood shelving, open delicases, metal and wood archways, and market lighting.
The interior includes thoughtful touches like painted beadboard and chalkboards, and design accents such as a custom penny round tiled floor, faux antiqued tin ceiling, marquee-lit ceiling trusses, and monochrome black and camel-toned bentwood dining chairs. The vision is to transform the atmosphere into an emporium that captures the essence of a small-town local market while incorporating Fort Collins' active, outdoorsy, and entrepreneurial spirit.
